Ingredients

  • 5 ounces tuna, in water (140 g)
  • ¼ red onion
  • 1 stalk celery
  • 1 tablespoon mayonnaise (15 ml)
  • 1 tablespoon yogurt, nonfat (15 ml)
  • 1 teaspoon yellow mustard (7 g)
  • 1 teaspoon Sriracha sauce (5 ml)
  • ½ tablespoon capers (5 g)
  • 2 eggs
  • 1 fluid ounce milk, 2% reduced fat (30 ml)
  • 1 tablespoon olive oil (15 ml)
  • 1 ½ ounce cheddar cheese, shredded (42 g)
  • 2 slices bread, whole wheat

Preparing this recipe

  1. Drain the tuna in a colander.
  2. Finely chop the red onion and cut the celery into small cubes.
  3. Put the tuna in a bowl along with the mayonnaise, yogurt, mustard, Sriracha and some pepper and salt. Stir everything together. Mix in the red onion, celery and capers.
  4. Break the eggs into a bowl. Beat the eggs with the milk and some pepper and salt using a fork.
  5. Heat the oil in a frying pan. Pour the egg mixture into the pan and cook an omelet over medium heat. Spread half of the cheese over one half of the omelet, place the tuna salad on top and finish with the other half of the cheese.
  6. Fold the other half of the omelet over this. Cook on both sides over low heat for a few more minutes until the cheese is melted.
  7. Serve the omelet on a plate with the (toasted) bread on the side.
