Ingredients
- 1 ounce corn (28 g)
- ½ ounce kidney beans (14 g)
- 1 scallion
- 2 tomatoes
- 2 ounces cottage cheese, 4% milkfat (56 g)
- 1 pinch paprika (ground spice) (1 g)
- 1 pinch ground cumin (1 g)
Preparing this recipe
- Rinse the corn and kidney beans in a colander with cold water and let them drain.
- Slice the scallion into rings.
- Cut a cap off both tomatoes and hollow out the tomatoes with a spoon. Let the tomatoes drain upside down.
- Mix the cottage cheese with the corn, kidney beans, scallion, paprika, cumin, pepper and salt.
- Fill the tomatoes with the cottage cheese salad.
