Ingredients

  • 1 ounce corn (28 g)
  • ½ ounce kidney beans (14 g)
  • 1 scallion
  • 2 tomatoes
  • 2 ounces cottage cheese, 4% milkfat (56 g)
  • 1 pinch paprika (ground spice) (1 g)
  • 1 pinch ground cumin (1 g)

Preparing this recipe

  1. Rinse the corn and kidney beans in a colander with cold water and let them drain.
  2. Slice the scallion into rings.
  3. Cut a cap off both tomatoes and hollow out the tomatoes with a spoon. Let the tomatoes drain upside down.
  4. Mix the cottage cheese with the corn, kidney beans, scallion, paprika, cumin, pepper and salt.
  5. Fill the tomatoes with the cottage cheese salad.
