Ingredients

  • 2 eggs
  • 2 tablespoons milk, 2% reduced fat (30 ml)
  • 1 tablespoon olive oil (15 ml)
  • 2 ounces grilled chicken strips (56 g)
  • 1 tablespoon cream cheese, reduced fat (15 ml)
  • 1 ounce grated cheese (28 g)
  • 1 slice bread, whole wheat

Preparing this recipe

  1. Break the eggs into a bowl. Whisk the eggs with the milk, adding a pinch of salt and pepper, using a fork.
  2. Heat the oil in a frying pan. Pour the beaten egg mixture into the pan and cook the omelet over medium heat.
  3. Meanwhile, slice the grilled chicken.
  4. In a small bowl, mix together the cream cheese and grated cheese.
  5. Serve the omelet on a plate. Spread the cream cheese mixture over one half, then top with the grilled chicken slices and fold the omelet in half. Serve with the (toasted) bread.
