Ingredients
- 2 slices bread, whole wheat
- 1 avocado
- 2 eggs
- 1 tablespoon olive oil (15 ml)
Preparing this recipe
- Toast the bread to your desired level of crispiness.
- While the bread is toasting, scoop out the avocado into a bowl and mash it with a fork until it's mostly smooth.
- In a separate bowl, whisk together the eggs with a pinch of salt and pepper.
- Heat a non-stick skillet over medium heat. Once hot, add the olive oil to the skillet and swirl to coat the bottom. Add the egg mixture to the skillet and stir gently with a spatula until the eggs are scrambled and cooked to your liking.
- Spread the mashed avocado onto the toast. Spoon the scrambled eggs on top of the avocado toast and serve immediately.
