Ingredients

  • 5 ounces tofu (140 g)
  • 1 tablespoon teriyaki sauce (15 ml)
  • 1 tablespoon olive oil (15 ml)
  • 1 bell pepper
  • 2 ounces bean sprouts (56 g)
  • 1 carrot
  • 1 orange
  • 1 handful mixed salad (30 g)
  • 2 slices bread, whole wheat

Preparing this recipe

  1. Drain the tofu well, pat dry and cut into cubes. In a small bowl, mix the tofu cubes with teriyaki sauce and oil.
  2. Slice the bell pepper into strips. Place the bean sprouts in a colander and pour boiling water over them, then rinse with cold water and let drain. Use a vegetable peeler to slice the carrot into long strips lengthwise. Peel the orange and cut it into segments. Combine the bell pepper, bean sprouts, carrot, orange and a handful of mixed salad in a bowl and toss together.
  3. Heat a skillet and fry the tofu cubes for 2-3 minutes until golden brown.
  4. Top the salad with the tofu. Season with pepper and salt to taste and serve with the (toasted) bread.

Requisites:

  • Spiralizer or julienne peeler

Looking for a spicy twist? Adding thinly sliced red chili peppers is a great option or you can mix some chili flakes into the tofu cubes for an extra kick.
