Ingredients
- 3 ounces orzo (84 g)
- 1 ½ tablespoon olive oil (23 ml)
- 1 squeeze lemon juice (5 ml)
- 1 ¾ cup green beans (frozen) (220 g)
- 1 egg
- ¼ red onion
- 1 trout fillet, smoked
- ½ tablespoon capers (5 g)
Preparing this recipe
- Prepare the orzo according to the package instructions. After draining, mix with oil and some lemon juice. Let the orzo cool down.
- Add the green beans to a pot of boiling water and cook for about 6 minutes until tender, then rinse with cold water and let them drain.
- Meanwhile, boil the egg in a pot of water for 6-8 minutes until cooked. Cool it down with cold water. Peel the egg and cut it into four quarters.
- Slice the onion into thin half rings and cut the trout into pieces.
- Mix the green beans, red onion, trout and capers through the orzo.
- Serve the orzo salad on a plate and place the egg quarters on top. Season with pepper and salt.
