Spicy salmon salad with orzo

Ingredients
- 3 ounces orzo (84 g)
- 2 ounces edamame (56 g)
- 1 clove garlic (5 g)
- 1 slice ginger
- 1 ½ tablespoon soy sauce (23 ml)
- 1 teaspoon honey (7 g)
- 1 teaspoon Sriracha sauce (5 ml)
- 2 squeezes lime juice (10 ml)
- 1 ½ tablespoon olive oil (23 ml)
- 2 ounces smoked salmon (56 g)
- 1 bell pepper
- ½ cucumber
- 1 carrot
- 1 scallion
Preparing this recipe
- Cook the orzo according to the instructions on the package.
- Cook the edamame until tender according to the instructions on the package.
- Press the garlic clove and grate the ginger.
- Mix the garlic, ginger, soy sauce, honey, Sriracha, half of the lime juice and the oil in a small bowl.
- Slice the smoked salmon into strips and mix in a bowl with half of the dressing. Let this marinate for 10 minutes.
- Slice the bell pepper into thin strips and the cucumber into half-moons. Slice the carrot lengthwise into ribbons using a vegetable peeler. Slice the scallion into thin rings.
- Mix the orzo, edamame, bell pepper, cucumber, carrot and scallion rings in a bowl with lime juice and some salt and pepper.
- Serve the salad on a plate. Place the marinated salmon strips over the salad and serve the remaining dressing on the side.
