Ingredients
- ½ pound sweet potato (227 g)
- 8 ounces green beans (frozen) (224 g)
- ¼ red onion
- 1 scallion
- 4 pickles
- 5 ounces 96% lean ground beef (140 g)
- 1 ounce grated cheese (28 g)
- 1 teaspoon paprika (ground spice) (2 g)
- ½ teaspoon ground cumin (1 g)
- 1 tablespoon olive oil (15 ml)
- 1 ½ tablespoon yogurt, nonfat (23 ml)
- ½ tablespoon mayonnaise (8 ml)
- ½ teaspoon yellow mustard (3 g)
- 1 squeeze lemon juice (5 ml)
Preparing this recipe
- Peel the sweet potato and cut it into evenly sized cubes. Add to a pot of boiling water and cook for 8–10 minutes, or until tender. Drain, rinse under cold water, and let cool.
- Cook the green beans according to the package directions. Drain, rinse under cold water, and let cool.
- Finely chop the red onion. Thinly slice the scallion and dice the pickles.
- In a bowl, combine the ground beef with the cheese, paprika, cumin, red onion, salt, and pepper. With damp hands, shape the mixture into 3 small patties.
- Heat the olive oil in a skillet over medium heat. Cook the patties for 3–4 minutes per side, or until cooked through.
- In a large bowl, combine the sweet potato, green beans, scallion, and pickles.
- In a small bowl, stir together the yogurt, mayonnaise, mustard, and a squeeze of lemon juice.
- Add the dressing to the sweet potato salad and toss to combine. Season with salt and pepper to taste.
- Serve the sweet potato salad with the cheesy beef patties.
