Ingredients

  • ½ avocado
  • 2 eggs
  • 1 tablespoon olive oil (15 ml)
  • 1 ounce feta cheese, crumbled (28 g)
  • 2 slices bread, whole wheat

Preparing this recipe

  1. Dice the avocado into small pieces.
  2. Crack the eggs into a bowl and whisk them with a fork or whisk. Add a pinch of salt and a dash of pepper to taste.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Pour the beaten eggs into the skillet and let them cook for a minute or two until the edges start to set.
  5. Sprinkle the feta cheese and diced avocado evenly over one side of the omelet.
  6. Carefully fold the other side of the omelet over the filling using a spatula, creating a half-moon shape. Cook for another minute or until the cheese is melted and the omelet is fully cooked.
  7. While the omelet is cooking, toast the bread until golden brown.
  8. Serve the omelet hot with the (toasted) bread on the side.
