Preparing this recipe
- Use a (vegetable) slicer to shave 5 long slices from the cucumber lengthwise. Pat the slices dry with paper towels. Spread pesto on one side of the slices.
- Cut the turkey breast slices into strips.
- Cover the cucumber in its entire length with the turkey breast. Roll up the cucumber ribbons and optionally secure them with a cocktail pick to keep the cucumber roll-ups together.
