Ingredients

  • 5 ounces green beans (frozen) (140 g)
  • 3 ounces garden peas (frozen) (84 g)
  • 1 avocado
  • 1 clove garlic (5 g)
  • 8 cherry tomatoes
  • 2 fluid ounces yogurt, nonfat (60 ml)
  • ½ tablespoon vinegar (8 ml)
  • 1 handful mixed salad (30 g)
  • 8 olives
  • 2 slices bread, whole wheat

Preparing this recipe

  1. ​​​​​​Cook the green beans according to the instructions until tender but still crisp.
  2. Meanwhile, cook the garden peas following the package instructions. 
  3. Peel the avocado and cut it into strips. Press the garlic and halve the cherry tomatoes.
  4. Make a dressing with the yogurt, vinegar and garlic. Season with pepper and salt.
  5. Prepare a salad with the lettuce, green beans, peas and olives. Distribute the avocado and tomatoes over the salad.
  6. Drizzle some dressing over the salad and serve the rest on the side. Serve with (toasted) bread.

Tip van FitChef

1. This salad becomes even more delicious with fresh herbs like dill, mint or basil.
2. You can also leave out the garlic or use garlic powder instead. It has a milder flavor.
