Pita burger with feta & avocado-cucumber salad

Ingredients

  • 1 clove garlic (5 g)
  • 5 ounces 96% lean ground beef (140 g)
  • 1 teaspoon ground cumin (2 g)
  • 1 teaspoon paprika (ground spice) (2 g)
  • 1 ½ tablespoon olive oil (23 ml)
  • 1 tomato
  • ½ avocado
  • ½ cucumber
  • 1 scallion
  • 1 pinch chili powder (1 g)
  • 1 squeeze lime juice (5 ml)
  • 1 pita, whole wheat
  • 2 tablespoons hummus (40 g)
  • 1 handful spinach (25 g)
  • 1 ounce feta cheese, crumbled (28 g)

Preparing this recipe

  1. Mince or press the garlic.
  2. In a bowl, combine half of the garlic with the ground beef, cumin, paprika, salt, and pepper. Shape into a burger patty using wet hands.
  3. Heat half of the olive oil in a skillet over medium heat. Cook the burger for 4–5 minutes per side, until cooked through.
  4. Meanwhile, slice the tomato. Cube the avocado and cucumber, and slice the scallion.
  5. In a bowl, combine the avocado and cucumber with the scallion, remaining garlic, chili powder, lime juice, and remaining olive oil. Season with salt and pepper.
  6. Toast the pita until lightly crisp.
  7. Cut the pita open. Spread the hummus inside, add the spinach, then the burger and tomato slices. Top with feta.
  8. Close the pita and serve with the avocado-cucumber salad on the side.

2. You can also try using (shredded) cheddar instead of feta.
