Ingredients
- 3 ounces bulgur (84 g)
- ½ cube vegetable bouillon
- ½ cucumber
- 10 cherry tomatoes
- ¼ red onion
- 1 clove garlic (5 g)
- 1 tablespoon olive oil (15 ml)
- 3 ounces 96% lean ground beef (84 g)
- ½ teaspoon ground cumin (1 g)
- 1 pinch cinnamon (1 g)
- ½ teaspoon paprika (ground spice) (1 g)
- 2 squeezes lemon juice (10 ml)
- 1 tablespoon yogurt, nonfat (15 ml)
Preparing this recipe
- Cook the bulgur with the bouillon cube according to the package directions. Drain and let cool.
- Dice the cucumber and halve the tomatoes. Finely chop the red onion and mince the garlic.
- Heat the oil in a skillet over medium heat. Add the ground beef, half of the garlic, cumin, cinnamon and paprika. Cook for about 4 minutes, until browned and cooked through.
- In a small bowl, stir together the remaining garlic, half of the lemon juice and the yogurt.
- In a large bowl, combine the bulgur, cucumber, tomatoes and onion. Add the remaining lemon juice and season with salt and pepper.
- Spoon the bulgur salad onto a plate. Top with the cooked meat and drizzle with the yogurt sauce.

1. Toast the cumin in the pan for 30 seconds before adding the meat to deepen the flavor.
2. Add a handful of chopped parsley to the bulgur for extra freshness and color.
