Ingredients

  • 1 salmon fillet
  • 3 ounces quinoa (84 g)
  • ½ onion
  • 1 tablespoon olive oil (15 ml)
  • 8 ounces spinach (224 g)
  • 2 fluid ounces yogurt, nonfat (60 ml)

Preparing this recipe

  1. Thaw the salmon according to the instructions.
  2. Cook the quinoa until done according to the instructions on the package.
  3. Roughly chop the onion.
  4. Season the salmon fillet with salt and pepper and lightly coat with half of the oil. Grill the salmon fillet in a grill pan for 6-8 minutes until almost done. Turn after 3 minutes.
  5. Heat the remaining oil in a sauté pan and gently fry the onion until translucent. Stir in the spinach a handful at a time and let it wilt while stirring. Mix in the yogurt with some salt and pepper and heat while stirring.
  6. Serve the salmon with the quinoa and spinach.
