Ingredients
- 3 ounces bulgur (84 g)
- ½ cube vegetable bouillon
- 2 steamed beets
- 5 radishes
- 1 apple
- 1 ½ tablespoon olive oil (23 ml)
- ½ teaspoon yellow mustard (3 g)
- 1 teaspoon honey (7 g)
- 1 teaspoon vinegar (5 ml)
- 1 handful mixed salad (30 g)
- 1 ½ ounce goat cheese (42 g)
Preparing this recipe
- Cook the bulgur with the bouillon cube according to the package instructions. Drain, rinse with cold water and let it cool down completely.
- Dice the red beet. Cut the radishes into thin slices and then into strips. Slice the apple into small wedges.
- In a small bowl, mix half of the oil with mustard, honey and vinegar. Whisk until it becomes a dressing.
- Heat the remaining oil in a skillet and fry the apple wedges for 4 minutes until golden brown.
- Spread the lettuce on a plate, layer the bulgur on top, followed by the beets, radishes and apple and crumble the goat cheese over the salad. Season with salt and pepper.
- Serve the dressing on the side or pour it over the salad.

1. Fresh parsley, mint or basil are delicious with this salad.
2. You can also add the apple wedges to the salad without cooking them.
